Italian Homemade Pasta Recipe

I find making homemade Italian pasta recipes so fun to do as a couple or with kids. At our house we often make pasta during the holidays or on Sundays. It takes a bit longer than any regular meal, but the results are amazing, and it will be worth the wait.

These are also the two hooks I refer to when prepping the dough in the recipe. I like the coated ones because they are also dishwasher safe.

This one is called a flat hook. Though I like to refer to it as the butterfly hook.

This weekend I had an awesome little get together with a few women from my church and neighborhood where I got to teach how to make home made pasta from scratch. I use these “>tools to roll out the dough and cut it in into the tagliatelle shape. I highily recommend using an eletrical pasta machine such as this, because pasta making is already something that requires many hands, so this one frees you up a little. I find pasta making to be so fun to do as a couple or with kids. At our house we often make Italian homemade pasta during the holidays or on Sundays. Home made pasta tagliatelle made from an authentic Italian at home. An easy 5 ingredient recipe that everyone can enjoy making at home.

Equipment

  • Kitchen Aid Pasta Attachment

Ingredients

  • 3½ cups allpurpose flour
  • 1/2 tsp salt
  • 5 eggs
  • 1 Tbsp olive oil
  • 4-5 Tbsp water

Instructions

  1. In a kitchen mixer add flour and salt. With the butterfly hook mix for a few seconds. Pause mixer. Incorporate eggs, oil, and water. Begin with 2 tablespoons of water, then gradually add the remaining two as needed. Allow dough to mix. Pause if needed to scrape the sides. Once dough is mixed and still slightly crumbly, pause mixer again and switch to the dough hook. Mix for about 5 minutes until a nice balls forms and all sides are clean. If needed, gently sprinkle about 1 Tbsp of flour along the sides of the bowl to allow dough to detach and move freely inside the bowl. Remove the dough, cover and allow to rest for 15-20 minutes.
  2. In the mean time prepare the kitchen aid with the roller pasta attachment.
  3. Once dough has rested, divide it into 4 balls. Gently stretch it to a rectangular shape. Run through the pasta machine on the widest setting 1. Slowly run through the machine until you arrive at the thinnest setting. Repeat this step with all four pasta balls. Gently rest the sheets of pasta on towels. Use flour if needed to avoid the dough from sticking. Cut the long sheets of pasta into 1 foot long strips.
  4. Switch to pasta cutter kitchen aid tool. Run each 1 foot long strip through the kitchen aid tool. Lay the tagliatelle noodles on towels. Separate and gently sprinkle with flour to avoid sticking.
  5. In a stockpot, bring water to boil with salt and 1 Tbsp of olive oil. Once water is boiling, add all the pasta at the same time to the pot. Cook for about 5 minutes. Gently mix along the cooking process to avoid noodles from sticking to each other.
  6. Pasta will float to the top once is ready.
  7. Remove with a ladle and place in a bowl. Coat with olive oil, gently mix pasta around to evenly spread the olive oil.
  8. Serve immediately with your favorite sauce.
