<p>I love this soup. I make it at least once a month during the fall and winter months. My kids love it and literally lick their mustaches whenever I am pouring it on their bowls. It&#8217;s super easy to make and requires no mess.</p>

<p>If you are not sure which pressure cooker to buy, here is my favorite one. It replaces so many kitchen gadgets. I wish it was out when I got married because I would have bought this instead of having so many over gadgets laying around in my kitchen.</p>

<p>I love to serve this butternut squash soup recipe with freshly baked French bread from the store. In fact I stock up on baguettes or French bread at home by freezing it right away in a zip loc bag. When I need it, I just reheat it in the oven at 350 for 10 minutes tops. I then end up with a super hot crunchy load of bread which we love to dip inside our creamy butternut squash soup.</p>

<p>1 onion</p>

<p>1 butternut squash ( prechopped and cubed)</p>
</li>

<p>1 cup of chicken or beef broth (I use the better than building mix to prepare it easily in advance or left over broth from stews that I freeze and use later or immediately the next day)</p>
</li>
<li>
<p>1 tsp of salt</p>
</li>
<li>
<p>1 tbsp oil</p>
</li>
</ul>
<p><strong>Instructions</strong></p>

<p>In your instapot set setting to sauté and add the oil and the onion. Sauté until golden. Then add the butternut squash. Sauté for a few minutes. Turn off the instapot. Add the broth and cook under <strong>vegetable</strong> setting for 8 minutes.</p>

<p>Once soup is ready and steam has been released, blend all the soup ingredients with an immersion blender.</p>
</li>
<li>
<p>If a better consistency is preferred, add an extra cup of broth by adding 1/4 of a cup at a time.</p>
</li>
<li>
<p>Another option to blend all the ingredients is to place them in a blender and blend until smooth. Do not overblend to prevent soup from becoming too frothy. Careful with hot contents especially when transferring in and out of the blender.</p>
</li>
<li>
<p>Serve hot with sliced ciabatta bread.</p>
</li>

<p>How to Easily chop butternut squash:</p>
<p>I use this method for any hard shelled fall type of squash. Whenever I decide to Chop a pumpkin or butternut squash at home I do the following.</p>
<p>Cut the butternut squash in half. With a spoon remove seeds and threads from the center on each side.</p>
<p>Fill a large deep 9*13 glass dish or cookie sheet with 1/2 inch of water at the bottom.</p>
<p>Lay the two pieces of butternut squash facing down and bake at 350 degrees for 30 minutes.</p>
<p>Once ready you can easily remove the butternut squash with a spoon and separate it from its shell without having to go through some heavy duty cutting.</p>
<p>The inside consistency ill be more of a paste.</p>
<p>When adding it this way to the soup, you may omit the part where you sauté the butternut squash. Only sauté the onions , then add the rest of the ingredients and cook in the pressure cooker according to previous directions.</p>

				<div class="et_pb_text_inner"><p>I absolutely love butternut squash. Even though it comes in the harder of shells, the shape is fantastic and is one of the sweetest from the family of squashes. Not sure that is a thing!</p>
<p>I usually buy it frozen already chopped in individuals bag. That is my favorite option but not always the most popular. Otherwise I also buy it chopped and fresh, and then I freeze it once I go home or use it right away.</p>
<p>Last but not least I also buy it whole. To use it for soups I have to bake it first. I do so by cutting the squash in half, placing both sides face down on a baking sheet, and cooking it at 375 for 30 minutes. I then scoop out the seeds, then scoop out the pulp and use it for my recipes.</p>
<p>I wanted an even more flavorful recipe lately so I decided to find a new flair to the traditional butternut squash soup. I went to an organic food restaurant and I could tell their butternut squash was so infused with flavor I had to scout the internet for a better recipe for our family. That is when I discovered  Butternut Squash Soup with apples. They marry perfectly together and make the soup even more sweet and tasty.</p>
<p>Did you know another great reason to fall in love with eating butternut squash, is because it’s also a great source of<b> Vitamin A, Vitamin C, Magnesium, and Potassium</b>! Especially if one like stores exercise a lot magnesium and potassium help with cramps and hydration. Vitamin A is great to also cure acne and vitamin C is an immune booster and also aids skin health.</p>

<li>1 large butternut squash (about 5 lbs)</li>
<li>1 green apple, sliced and cored</li>
<li>1 small yellow onion, chopped</li>
<li>2 carrots, chopped</li>
<li>3 tbsp olive oil2 tsp cinnamon</li>
<li>1 1/2 tsp salt</li>
<li>1/2 tsp cumin</li>
<li>1 tsp chili powder</li>
<li>2 tbsp ghee</li>
<li>3 cups chicken broth</li>
</ul>
<p><strong>Instructions</strong></p>

<li>Preheat oven to 400 degrees F. In a large bowl, combine the butternut squash, olive oil, 1 tsp cinnamon, 1/2 tsp salt, and 1/2 tsp cumin. Mix together, coating the squash well. Spread out on a rimmed baking sheet.</li>
<li>Next, in the same bowl that the butternut squash was in, toss the apple slices, onion, and carrots to coat with the remnants. Place on a second rimmed baking sheet and add both baking sheets to the oven. Roast for 35-40 minutes until soft, stirring once.</li>
<li>Heat up ghee over medium heat in a large pot on the stove. Add the roasted ingredients and then the chicken broth. Add 1 teaspoon each of salt, cinnamon and chili powder. Bring to a boil, then reduce heat to low and simmer, covered, for 20 minutes.</li>
<li>Using an immersion blender, combine the ingredients until smooth, or transfer to a blender to puree. Serve warm.</li>
