				<div class="et_pb_text_inner">We recently discovered almond flour. I mean it seems to be in every other recipe in the keto diet world and paleo world, so  I picked it up at the store casually as my food storage. And because I was at a major warehouse they only had the large bag of it. It was still way cheaper than buying a tiny bag at any other store.  Yeah, not necessarily the best way to try a new ingredient in your home. We are a family of 6 though.</p>
<p>Here is what we have loved about it so far. The smell and fragrance it adds to any meal. Not saying it can be added to any meal though. But the ones I have made with it, I did notice that It changed the flavor by quite a bit.</p>
<p>Here is what is different about almond flour, it is not sure fine like wheat, neither does it knead and rise like wheat. Almond flour adds almost an element of crunchiness to any meal. Hence why I decided to make my waffle recipe with half regular flour and half almond flour. I did try it with the almond flour only at first, and I noticed that it kept sticking to the pan and it was a bit too dry for our taste. But when mixed in with flour, it was the perfect amount of crunchiness and flavor that made it where no one noticed at home, but I came winning with the added flavor and nutrition of my new pantry ingredient discovery.</p>

<li>1 cup of almond flour</li>
<li>1 cup of regular all purpose flour</li>
<li>1 teaspoon of baking powder</li>
<li>2 tablespoons of sweetener of choice</li>
<li>4 eggs</li>
<li>4 oz. of plain greek yogurt</li>
<li>1 teaspoon fo vanilla extract</li>
<li>1-2 tablespoons of non dairy milk</li>
</ul>
<p><strong>Instructions</strong></p>

<li>Begin by warming up the waffle iron. Start preparing the batter by adding all the dry ingredients to a bowl. Mix gently with a fork so that the baking powder and sugar are evenly distributed. Make a small well in the center like a volcano, crack open the eggs and add them to center. Shells excluded please. Continue by adding the plain greek yogurt. Mix all the ingredients until a nice creamy batter is formed. For waffles you are looking for a thicker consistency. Add milk to it as needed mixing well each time to avoid making the batter turn too liquid too soon. Allow the batter to sit for a minute or two. You will notice that it will either thicken or turn softer with time while you are preparing each waffle. You can add more flour or milk accordingly. Use about a tablespoon of one or the other depending on how the batter is adjusting as time goes by. Especially while baking, the batter will sit on the counter, it may thicken or turn too runny.</li>
<li>Grease your waffle iron before adding the batter to it, make sure to not completely  fill up the waffle iron since it will grow during the baking process and it will end up coming out and leaking everywhere.</li>
<li>The first waffle is always a test run. Try it once done and see if you like the consistency. For a fluffier waffle add more milk, if you prefer it thicker add more flour.</li>
<li>Enjoy with some maple syrup and fruit as toppings. Coconut whipped cream is also a great non dairy alternative and a delicious complement to top any kind of waffles.</li>
</ol>
<p><strong>Notes</strong></p>
<p>Sour cream is also a great substitute to yogurt. Just remember yogurt has probiotics so we prefer that because of its added benefits</p>
<p>For milk we use rice milk. Soy, oat or almond are all great substitutes as well.</p>
<p>For sweeteners we like to use monkfruit or plain granulated raw sugar.</p>

				<div class="et_pb_text_inner"><p>Torta del giorno as they call it at our favorite stay in Italy. It’s very close to Pisa where ewe usually stay which is one of my favorite squares in Italy and Duomo. It’s super clean and it’s located inside a giant set of medieval walls, making it a very sage and protected city.</p>
<p>When it also comes to italian breakfasts, there is nothing better than to start the day with a soft delicious cake. It’s not for keto or extreme dieters, but it’s light and has some fruit in it. It’s also my new favorite way to start the day.</p>
<p>I do struggle to often get out of bed and I have a huge sweet tooth. So getting up to dessert is the perfect treat and the perfect motivation. This cake I find it a great way to start my day too since I exercise in the morning so after the gym I need to refuel and carbs are my go to whenever I am hungry. Paired with a nice protein shake of course.</p>

<li>2 eggs</li>
<li>160 grams of sugar</li>
<li>90 grams of sunflower or vegetable oil</li>
<li>375 grams of flour</li>
<li>8 grams of baking powder</li>
<li>8 grams of baking soda</li>
<li>2 apples peed and diced</li>
<li>powder sugar for sprinkling on top</li>
</ul>
<p><strong>Instructions</strong></p>

<li>Preheat oven at 350 F or 180 C.</li>
<li>Begin by blending the eggs and sugar for about 5 minutes until a fluffy cream forms.</li>
<li>Proceed by adding the yoghurt. Then the oil. Finally add all the dry ingredients.</li>
<li>Finish off by adding the pears and mixing them gently with a fork so that they are even spread throughout the batter.</li>
<li>Grease a pan and add the batter.</li>
<li>Bake for 45-55 minutes or until fork inserted in the center of the cake comes out clean. If needing to check the oven make sure the cake looks slightly golden and cooked on the top. Avoid ever opening the oven during the baking process because it will make the cake collapse and stop baking.</li>
<li>Once cake has chilled for 5 minutes, remove from the pan. Sprinkle with powder sugar. Allow to chill for at least 1 hour. It’s also good still warm, but I prefer it at room temperature after it has chilled overnight.</li>

				<div class="et_pb_text_inner"><p>Every year we go to Italy and we spend a few days in Tuscany.</p>
<p>We have a favorite little hotel in the town of Forte die Marmi that overlooks the mountains of Carrara where we love to stay as a family because we are treated like royalty.</p>
<p>Something that we love at the hotel is the breakfast a la carte. The cakes are made form scratch every day. One in particular that stuck with me was a peach cake.</p>
<p>During the month of August and September it’s also peach season for us back at home. We like to buy peaches from local farmers in boxes of 20 pounds and we usually easily go as a family through about 3. Being that we have 4 little kids, our family goes through quite a bit of food. The kids also absolutely love to feast and snack on peaches. My mom heart fills with joy knowing they are eating fresh fruit that was grown from the earth.</p>
<p>Some years we have also taken the time to slice the peaches and freeze them in zip loc bags for the winter. But now that the kids are getting longer we no longer need to store since everything gets eaten.</p>
<p>Both of these events combined got me also searching for recipes for peach cake.This particular one was a great success here at home so I wrote it up on the blog so anyone could make it.</p>
<p>The ingredients and process are super simple, and the results are a yummy and quick peach bread that is also a great little afternoon pick me up or snack in between larger meals.</p>

<li>Food processor or a blender and a kitchen scale</li>

<p><strong>Ingredients</strong></p>

<li>3-4 peaches</li>
<li>90 grams of sunflower or vegetable oil</li>
<li>90 grams of cow milk or rice milk at room temperature preferred</li>
<li>3 eggs</li>
<li>8 grams of baking powder</li>
<li>8 grams of baking soda</li>
<li>170 grams of sugar</li>
<li>280 grams of flour type 00 or just plain baking flour for new learners</li>
<li>1 zest fo a lemon (optional)</li>
</ul>
<p><strong>Instructions</strong></p>

<ol>
<li>Preheat oven at 350 F or 180 C.</li>
<li>Begin by slicing the peaches and adding them to the blender. continue by adding the oil and milk and eggs. Gently blend for a few seconds until all the ingredients are still chunky but mixed together. Proceed by adding the baking powder and soda and sugar. Blend again until ingredients are smooth, but peaches should still be slightly chunky. Finish adding the flour. I usually add half it and blend then add the rest. You may now allow the batter to continue to blend until it’s nice and smooth.</li>
<li> Grease a 9 inch really dip pan or spray with wilton cake release spray.</li>
<li>Pour all the batter inside the pan.</li>
<li>Bake for 50-55 minutes or until fork comes out of the center completely clean. Add 5 minutes increments if the cake is still not cooked after the set time and continue to check until it’s completely chilled.</li>
<li>Remove cake from the oven and allow to cool for 5 minutes before removing it from the pan.</li>
<li>Sprinkle with powder sugar on top if desired. This cake is great served while still warm or after chilling at room temperature for a couple of hours.</li>
<li>Enjoy within 2 to 3 days.</li>

<p><strong>Notes</strong></p>

<p>Remember to use the button called tare once you place your bowl on the scale and every time you are about to add new ingredients. What it does is zero out what is already on the scale so it’s easier to measure each ingredient each time.</p>
<p>If available, you may substitute the baking powder and soda for 1 packet of yeast for desserts.</p>
<p>To obtain a cake like the one shown in the photo, slice up an extra peach and set it up as rows starting from the outer perimeter of the cake. Sprinkle cake on top with powder sugar once it’s baked.</p>

<p>I have taken a while to post many recipes, including this one. I always thought there would be so many recipes for apple cinnamon muffins on the web I didn’t even want to try and write mine up. Except for the fact that I have been making these apple muffins that are somewhat healthy for over a decade.</p>
<p>Now they are not going to be gluten free and keto and without dairy. What I have tweaked with this recipe was simply the amount of sugar that they required. We also make sure we load them with apples.</p>
<p>Before this recipe I have tried many other healthy apple muffins with substitute ingredients such as bananas and other types of flours. Because those are definitely considered healthy apple muffins I will post those in the future as well.</p>

<p><strong>Ingredients</strong></p>

<ul>
<li>1 1/2 cups of flour</li>
<li>1/2 cup of sugar</li>
<li>1/4 cup of brown sugar</li>
<li>1 1/2 tsp. of baking powder</li>
<li>1 t. of cinnamon</li>
<li>1/2 tsp. of salt</li>
<li>1 tsp. of vanilla</li>
<li>1/2 cup of milk</li>
<li>1/3 cup of butter softened, even better if melted for 12 seconds in the microwave.</li>
<li>1 egg</li>
<li>1-2 finely chopped apples</li>
</ul>
<p><strong>Instructions</strong></p>

<li>Preheat oven at 375 F or 180 C.</li>
<li>Wash, peel, and finely dice the apples.</li>
<li>Begin by adding all the dry ingredients down the salt. Mix gently with a fork to allow everything to blend in well. Create a small hole in the center like a volcano and add the wet ingredients. Using a mixer blend on low all the ingredients gently until they are well incorporated. Pause the mixer, add the apples and mix them in with a spoon or a spatula.</li>
<li>Grease a muffin tin or use muffin paper liners for a quicker and less messy job. Fill each muffin tin up to 3/4 of its capacity. If you over fill them they will come out during the baking process. Make sure no extra batter stick since any droplet will burn while cooking. Make also sure each muffin tin has an even amount of batter otherwise the muffins will not cook at the same pace and some may burn or undercook.</li>
<li>Bake for 20 minutes. If dealing with an oven that doesn’t bake evenly, rotate the muffins half the way through. To make sure muffins are ready, poke one of the muffins in the very center with a fork or a toothpick. If they come out clean the batter has fully cooked.</li>
<li>Place muffins on a metal or cork each and allow to cool for 5 minutes, then proceed to remove from our of the pan.</li>

<p>Ghee and coconut oil are also great substitutes for this recipe. For added fiber use 3/4 cup of whole wheat flour and 3/4 cup of regular flour instead.</p>

<p>Happy Mother&#8217;s Day to all of you.</p>



<p>One of the cutest things about Mother&#8217;s Day is having a yummy breakfast made by the kiddos.</p>

<p>I love when the kids get up and come up with their own cute ideas. This year it was the first time in a long time that I was able to sleep through the night. Now that the kids are a little older they also all were so involved in preparing things for me on their own.</p>



<p>At the store on Friday they all started putting things in my shopping cart and telling me they didn&#8217;t want me to see it. SIena did ask me what my favorite flowers were and she chose the most beautiful bouquet of Pale Pink Roses. They also selected some Mother&#8217;s Day cards which they decorated and were so proud of.</p>



<p>I asked on the other side that we would wake up to a clean home and we would make a yummy simple breakfast as mess free as possible. Not just for me but for everyone else because I really wanted to spend the day together rather than cleaning.</p>



<p>We woke up around 8 and I went to shower. Siena slept in the boys room which means that they all woke up at the same time. When I woke up they were all happily talking and Davide and Dorian were taking a morning shower.</p>



<p>Then they headed downstairs while Dad helped them make this awesome German Pancake <a href="https://lifeatcasa.com/food/">Recipe</a>. I love waffles, and pancakes, and egg, and bacon, but this meal is seriously so simple and still filling.</p>



<p>My favorite part is how much it grows during the baking process. It&#8217;s also slightly crunchy on the top due to the butter. When fresh out of the oven, it forms this super thin salty crust that paired with maple syrup and some berries is the best.</p>
