½ tsp salt

¼ tsp ground black pepper

Meat Filling

1 lbs ground beef or ground turkey

1 onion diced

2 garlic cloves minced

1 cup peas (frozen or fresh)

2 large carrots peeled and chopped

½ tsp dried parsley

½ tsp ground ginger

½ tsp salt

Instructions

Begin by cooking the sweet potatoes in the pressure cooker. They will be done a lot faster. If that option is not available to you, you can boil the potatoes until fully cooked.

Wash the potatoes and remove all dirt before placing them in a pot with boiling water. Season with a little sprinkle of salt in the water. You can wait to peel the potatoes until after they are fully cooked and tender. The peel will come right off.

Once the potatoes have been boiled and peeled, place them in a bowl. Add the ghee, milk, salt, and pepper to the bowl and mix them until you obtain a mash potato like consistency .

In the mean time warm up a frying pan to begin cooking the ground beef. Ground beef or ground Turkey both have their own natural fat that will melt as it cooks so you don’t need to grease your pan prior.

I recommend using the highest percentage of ground beef when shopping for ground beef at the store, so it’s more quality meat and a lot less fat.

Stir the meat to break it up consistently. Once it’s almost ready season with the nutritional yeast, ginger, parsley.

Add the vegetables. Stir them for a few minutes until they appear tender and everything has blended evenly.

Another great way to switch up the order is to begin by adding the vegetables, followed by the beef last. If you decide to go for this option you will need to use just a very thin later of olive oil to prevent the vegetables from sticking and burning. Proceed right after by adding the meat, and the seasonings last.

Now that everything ready you will want to mash the sweet potatoes and add some salt and parsley to infuse them with flavor.

On a 9X9 casserole dish begin by adding the meat and vegetable mixture. Then layer this super nutritious medley with the sweet potato mash. Spread evenly. Cover completely the bottom layer. You can use a spatula or spoon to do it.

Cover the pan with tin foil and Bake at 400° for 20 minutes. If you don’t have that available you can omit covering it.

Serve warm and enjoy!
