Sweet Potato Shepherd’s Pie Recipe
- 2 sweet potatoes peeled and boiled
- 1 tbsp ghee
- 1/2 onion chopped and diced
- 1/2 cup carrotes diced
- 1 pound ground beef
- 1/2 cup tomato sauce
- 2 tbsp nutritional yeast
- 1 tbsp cumin
- 1 pinch salt
- 1 tsp tarragon
- 1/3 cup golden raisins optional
- Begin by boiling the potatoes in a pot with water or cook them in the pressure cooker at 7.5 PSI for 6 minutes.In a saute pan, begin by warming the ghee, add the onions and cook until translucent. Add the carronts and saute until tender. Add the ground beef and cook while constantly stirring. Make sure the ground beef is separated. Add all the seasonings. Add the salt, cumin, tarragon and tomato sauce to allow it to become creamy and minced. Add rainsins if desired. Once everything is cooked turn off the stove and set aside.Grab the sweet potatoes. Gently mash them until they are soft and mushy like mashed potatoes. Salt to taste. You may add an additional tablespoon of ghee.In a baking dish, add the ground beef mixture. Evenly spread it along the bottom. Top with an even later of sweet potatoes. Bake at 375° for 20 minutes. Serve and enjoy!
