In the pressure cooker cook the sweet potato on the vegetable setting for 5 minutes with about 3 cups of water. Once ready, remove the potato peel. It will slide off so easily you can do it with the help of a spoon or with your own finger tips. In a bowl mash the potato by pressing down with a spoon, then add the eggs, baking soda, salt, coconut flour. OPTIONAL INGREDIENTS:This is completely optional, but will make the bread have a thicker consistency. Because it will no longer make it a paleo recipe I am adding these ingredients in here. For a thicker bread you can add at this point one of the following ingredients: 1/2 coconut 1/2 cup of flax seed1/2 cup of flourA few spoonfuls of monkfruit sweetener or sugar.With an electric mixer add all ingredients together. Pour batter in a loaf rectangular shaped deep pan. Make sure to smooth over the top with a spoon since it will have a thicker consistency. Cook in the oven at 350° for 40 minutes. Remove from the oven and allow to cool before slicing. Bread will be really moist. This is normal especially if you didn't use a wheat flour as an added ingredients. It will delightfully taste very soft and buttery, though.
